The purpose of the addition of alcohols to jams and jellies is to create depths of flavor and to impart the rich notes found in bourbons, brandies, and other liquors into the fruits and juices. The alcohol used in our boozy jams boils off during the cooking, leaving behind its special flavor. However, in an abundance of caution, we always clearly label our boozy jams and jellies.
